As a new dietitian 15 years ago, I told most clients to only consume three eggs per week due to their cholesterol content. However, recent analysis of research from the past 40 years has found that eating one egg per day, as part of an overall healthy diet, does not contribute to higher cholesterol or significantly increase heart disease. That includes those diagnosed with high cholesterol.
Initially it felt odd to change my recommendations, but now I readily encourage everyone to enjoy eggs. Egg’s nutrients not only provide health benefits, they are extremely budget-friendly. And, there are literally hundreds of ways to prepare them! I love eating eggs personally but unfortunately my two children have it in their heads they don’t like eggs! So, like many parents, I must resolve to experiment with eggs and attempt to convert my kiddos into egg fans.
