As the summer heat continues, so does the heat from your grill. Now that we’re halfway into grilling season, you may be finding yourself bored with the same grilled chicken, hamburgers and steak. It’s time to brighten up your grate with some color by adding crisp vegetables and juicy fruit. The more colors of fruits and vegetables you have on your plate, the greater variety of nutrients you will consume. Also, some nutrients are more available in their cooked form, such as the antioxidant lycopene, which is more prevalent in cooked tomatoes rather than raw. Be careful not to overcook your produce and remove from the grill when it’s crisp-tender in order to retain the majority of nutrients.
